Ingredients

  • Coriander Bunch (Stems and Leaves)
  • 1 Garlic Clove
  • 1/2 Green Chili
  • 1 Tbsp Sugar
  • 2 Tbsp Fish Sauce
  • 2 - 3 Limes Juiced
  • Cucumber

Instructions

  1. In a mini food processor or small blender - blend corriander, garlic, green chilli, sugar, fish sauce and lime juice into a dressing.
  2. Thinly slice Kingfish against the grain and arrange on a plate.
  3. Spoon dressing onto sliced fish.
  4. Peel cucumber into ribbons and arrange over fish.
  5. Garnish with slices of the remaining green chilli.
  6. Voila, enjoy!
